Gidget's summer salad recipe

As a nutritionist and an urban farmer, I am often asked to share good recipes, but I am not an incredible chef like many people assume. With that said, the garden naturally provides all of the ingredients we need to make really tasty food.

That's the inspiration behind this "recipe."

Gidget's Summer Salad


Ingredients:


A large handful of a variety of basil leaves, left whole


One third of an Armenian cucumber or a cucumber of your choice; chopped


A mix of various chopped tomatoes, we used 2 red globe, a roma, and the yellow pear cherry tomatoes for this salad

A mix of chopped peppers, here we used 1/2 of the sweet orange pepper, a poblano, and a pizza pepper
A splash of EVOO
Some real salt and pepper
Directions:
Chop everything up, put it in a bowl, add a bit of olive oil, salt and pepper then enjoy. You could also add lemon or apple cider vinegar but Gidget's Garden veggies are incredible without it. This salad serves 2.

Gidget has vowed to destroy every roll of toilet paper she can get her paws on unless we start raising some real food. She would be happy with rabbits, chickens, tilapia, or even lizards.

  1. I vouch for your recipe! Mine was fantastic! In fact I just finished it for lunch. Sonny lost out on all but a small bowl full!
